Chocolate Ginger Cups using Immaculate Baking Company Ginger Spice Cookie Dough

Fall has arrived people! It's finally September. Kiddos are back to school and even though the temperature in Texas is still in the triple digits, I have baking on my mind.
I'm longing for those fall flavors--cinnamin, cloves, pumpkin, molasses, and ginger. However, I'm not longing for a big fat mess in the kitchen. Or slaving for hours in this heat.
So I came up with this easy peasy recipe that will be a hit for an after school snack. Or after dinner dessert. Or late night snack. Or breakfast, if it's a craving chocolate kinda morning.

You only need 4 ingredients for this baby! 
-A package of Immaculate Baking Company Ginger Spice Cookie Dough (or your favorite ginger cookie dough)
-sugar to roll the dough balls in
-a bag of chocolate chips to melt
-Vegetable oil to keep the chocolate from seizing. 
Immaculate Ginger Spice Bag
Step 1: Roll cookie dough balls in the sugar, and place in a mini muffin tin. Using a wooden tart shaper (Mine is from Pampered Chef),
press down on the dough to make imprints. Be sure to not push so hard that you lose the bottom!
Bake as directed
Ginger Cups Cooling
Step 2: After allowing cookie cups to cool, remove from pan and let rest on cooling rack.
In a microwave safe bowl, place 1 bag of chocolate chips and a small amount of vegetable oil.
I use 1/2-1 tsp. Microwave for 30 seconds and stir.
Continue doing this in 30 second increments until chocolate is melted throughly.
Pour chocolate into ginger cups.
I use a fork to flick extra chocolate on the edges for a decorative look. (for more chocolatey goodness)
Allow to cool. 
Eat one before your other family members eat them all.
