Jerk Chicken Sandwiches with Mango Chipotle Coleslaw

If you haven’t noticed, I’m a BIG fan of putting flavorful greens on grilled meat. My English cousins introduced me to adding coleslaw to a sandwich, and I’ve run with it. I love making new dressings to go on those pre-shredded ready to go bags of veggies found in your grocery produce aisle. Today’s is one of my favorites: grilled jerk chicken sandwiches with mango chipotle coleslaw.
There are a couple tricks to making this sandwich, but they are all easy peasy. First, start by marinating your chicken. I found my favorite jerk marinade at my local World Market®. I discovered it while looking at their new outdoor food section. My marinade of choice is the easiest most delicious jerk marinade out there - Walkerswood Jerk Marinade . The taste is oh so wonderful, with hints of cloves and other Caribbean spices. I marinated my chicken for about 1.5 hours. I will warn you, the longer you marinate the meat, the spicier it is. My lips were tingling, but my tummy was happy! Their website suggests starting at 30 minutes.
Another trick to make the best jerked chicken on your home grill is to use Wildwood Grilling Smoking Chips. It adds another layer of flavor to your grilled meats.
The coleslaw is easy peasy, and minus salt & pepper, the dressing is only 2 ingredients! The trick is using Bronco Bob’s Roasted Mango Chipotle Sauce. Paired with the pre-shredded veggie mixes, this salad is assembled in less than 3 minutes. Doesn’t get any easier than that! I love the no slip bottom on this super cute batter bowl.
Once your jerked chicken breasts are fully cooked, place them on sandwich buns.
Top with the creamy coleslaw! I know, you’re already drooling - aren’t you?
Finish off by drizzling more of the Bronco Bob’s Roasted Mango Chipotle Sauce. Your taste buds will thank me. I like to serve extra coleslaw on the side for our guests to enjoy.

We always have our BBQ’s buffet style so everyone can serve themselves. It just makes life easier. We start with a family friendly drink in a large drink dispenser. I love these new Iced Tea bags from Republic of Tea, I found them in the beverage section.
Since my kiddos are picky and won’t eat chicken unless it’s in nugget form, we had a bangers bar. My kiddos may not be a fan of chicken, but they do love sausage in a bun!
Since we know that our adult neighbors have sophisticated tastes, we had an assortment of condiments for their sausages. We served Sir Kensington’s Classic Ketchup, Spicy Brown Mustard, and Chipotle Mayonnaise. We also had Purveyor’s Kitchen Brown Sugar Balsamic Mustard, as well as their Bacon Ketchup. We also picked up a jar of our favorite Bavarian style sauerkraut.
I have this thing about condiments and where one puts a spoon that has been used. I found the perfect solution! I used these cocktail spoons which fit perfectly into these tasting spoons! Problem solved! Some other items I made: Cherry chip cookies, and homemade potato salad with chipotle mayo.
Here are a few of the BBQ essentials I think everyone should have. This collapsable food tent keeps those pesky bugs out! I love that it folds down for storage! This handy hot dog and sausage grill basket gives you a better handle on those sausages. I love outdoor table settings so much. Maybe it’s because of my four boys, and their propensity for breaking things. Or it could just be the cheery colors. You can see the ones I picked below in my “shop this post” section. Of course, no party would be complete without some yummy snacks. Our go-to party snack is Utz pretzels. A crowd favorite, and a container big enough to feed a crowd!

GRILLED JERK CHICKEN SANDWICHES WITH MANGO CHIPOTLE COLESLAW
Ingredients
For the jerked chicken
- 2 lbs chicken breasts
- 1 ½ cup Walkerswood Jerk Marinade
- 1 tablespoon olive oil
For the mango chipotle coleslaw
- 16-18 oz pre-shredded coleslaw mix. I mixed shredded cabbage with kohlrabi broccoli, brussels sprouts, carrots and kale. Pick your favorites!
- ¾ cup sour cream
- ½ cup Bronco Bob’s Roasted Mango Chipotle Sauce
- ½ teaspoon salt
- 1 teaspoon salt
Instructions
To make the jerked chicken:
- Marinate your chicken breasts for at least 30 minutes. The longer you marinate them, the spicier they will get. An hour and a half gave it some serious heat for this Texas girl. If you’re unsure – start at 30 mins.
- Preheat grill to medium high heat
- Place chicken breasts on grill grates and allow to cook 8 minutes on the first side. You’ll notice the pinkness going away, and the edges should be cooked. Flip and finish the other side in about 6-8 minutes.
- Always check for doneness!
- Place chicken on a bun, and then place coleslaw on top. Top with more of the Bronco Bob’s Roasted Mango Chipotle Sauce. Enjoy!
For the mango chipotle coleslaw
- In a large mixing bowl, mix together the shredded cabbage and other veggies you selected.
- In a smaller bowl, combine the sour cream, pepper, salt and Bronco Bob’s Roasted Mango Chipotle Sauce together, whisking well to combine.
- Pour over the cabbage, and toss to coat. Allow to set in the refrigerator for 30 minutes (or while your chicken is grilling).
- Toss again before serving.
