My friend Amy over at Mom Advice does a weekly blog post on things going on in her life, and her 3 favorite things for that week. Since I seem to get a lot of questions, I thought this might be a good way to fill you all in, and still feel somewhat productive in the blogging world. I love seeing what Amy is up to every week and seeing how she is dealing with her own health battle. I hope you enjoy my take on this as well.
The truth of the matter is I'm not feeling well enough to create very many projects or recipes. I still am, but just not at the rate I was. What I used to be able to cram into a few days seems to now take weeks. I actually spend most of my time on my couch. It's really kind of sad. One errand in a day will wear me out. I have a severe lack of energy along with a constant headache and 9 times out of 10, nausea to boot. To sum it up nicely, "IT SUCKS".
I have an appointment with a new neurosurgeon in June, and I have a lot of hope. Hope for answers, for solutions, for this waiting period to come to an end. One of my main issues is my vision. I tried to find a way to show people what it's like, and it's not exact, but this is very similiar:
I've lost the crispness and the edges. I have blurs, and double and lots of missing spots.
It varies from day to day, and some days are better than others.
But enough about the whining and crying. The good news is - I'm functional. I'm in a much better place than I was before. So let's talk about the 3 things I'm loving this week.
# 1 ..... If you follow me on Instagram, you know that right now I'm obsessed with Chipotle. I don't know what it is. The food is so so so yummy. It's fresh and I know that the food is coming from a good place. I don't have to prepare my meal, but I get to watch it be prepared for me - quickly. I'm visiting at least once a week. Sometimes more. I never regret it. Everything there is gluten free with the exception of the tortillas. Whew. Nothing beats safe "fast food".
Yes, it's true. My #2 thing this week is a small appliance. This crockpot has been a lifesaver for me. Especially now that it is hot in Texas and I don't want to have my oven going for hours on end. By dinner time I'm exhausted, so a meal that is ready is a God send. Lately we've been making Pork Tacos with Cilantro Aioli. The fact that I can set a timer on this crock pot and have it switch over to keep food warm is what sold me on this model. It has some great reviews as well. The lid locks for portability. But that also keeps the lid from jumping during cooking......or was I the only one that had that happen before?
#3 ..... my kindle fire.
It took me a few weeks to realize this was going to change my life. I love to read. I could read all day and be a happy happy happy camper. But with my eyesight, I had to say good bye to books. It was depressing. Especially with lounging around all day. I had the perfect environment & excuse for reading, and I couldn't. Until I realized how easy it was to change the font on my kindle. It's not ideal. My little thumbs get tired from clicking every 5 seconds, but I can read!!!!!!! My husband laughs at me, because this is how a page looks for me:
Last year, I fell madly in love with Scotland when we visited. Every country I've visited has left a mark on me, but none as large as Scotland. I'm still hoping to win the powerball, because I will buy a house there immediately after collecting my winnings. Since I'm reading the book, I'm also watching the Showtime show this week:
I'll be the first to admit it, I blush when I tell you that I can't stop watching this show. I'm usually not one to watch a show with so many, "adult themes" but I.just.can't.stop. The story is riveting. Time travel. Love. Men in kilts. Scotland scenery. Paris. sigh. So much to love. I watch Outlander through my Amazon Prime subscription. I love that you can add Starz on for just a small monthly fee. Perfect for those who have cut the cable cord.
