WHITE CHOCOLATE CHERRY EGGNOG BREAD

Ingredients

For The Bread:

  • 2 ¾ cups all-purpose flour
  • ¾ cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 ¼ cup eggnog
  • 6 tablespoon butter
  • 2 eggs
  • 1 cup white chocolate chips
  • 1 cup chopped quartered maraschino cherries
  • 1 tablespoon maraschino cherry juice

Instructions

  • Chop the maraschino cherries and set aside. I quartered mine to have large chunks in the bread. Set aside.
  • Melt the butter in the microwave for 1 minute, also set aside.
  • Pre heat oven to 350 degrees and grease your loaf pan.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda and cinnamon.
  • In a smaller bowl, combine the eggs with the eggnog and slowly add in the butter.
  • Make a well in the flour mixture, pour in the eggnog mixture and slowly fold in. When almost combined, add in the white chocolate chips and cherries. Mix until just combined.
  • Smooth mixture into loaf pan. Bake on middle rack, and begin checking at 45 minutes. Mine cooked about 10- 15 minutes, but ovens vary. A skewer should come out clean, and when tapped it should be sound hollow. If it is browning too rapidly, loosely place foil on top.
  • Once done, allow to cool for 10 minutes on a wire rack. Remove from pan and allow to cool longer.
  • Once cool, ice if desired. I simply added 1 tablespoon milk to 1 – 1 ½ cups confectioners sugar, drizzled on top. Place maraschino cherries on top for garnish.
  • ENJOY!
