For the Crust
- 1 pre-baked tart shell either store bought or homemade
For the onions:
- 2 tablespoon butter
- 1 tablespoon olive oil
- 2 medium to large sweet red onions
- 2 tablespoon light brown sugar
- 2 tablespoon good quality Balsamic Vinegar
Goat Cheese layer:
- 8 oz goat cheese I used a log
- 2 sprigs of fresh thyme
- salt and pepper to taste
- 1 egg
- 6 tablespoon milk.
To caramelize the onions:
Thinly slice the onions.
Over medium heat melt butter and olive oil together. Once warm, add in onions. Allow to sweat for around 10 mins, getting them to break down and brown.
Once cooked down, add brown sugar and balsamic vinegar. Continue sautéing until the onions become almost like a jelly or chutney type consistency
While your onions are breaking down, make the goat cheese mixture by mixing the leaves of thyme, the goat cheese, salt and pepper and egg together.
Slowly add the milk a tablespoon at a time until you reach a creamy consistency.
To assemble the tart:
Layer the balsamic onions on top of the tart shell
then top with the goat cheese mixture.
Bake for around 25 minutes, or until the top begins to brown. There should be no jiggle left when slightly shaken.
Allow to cool on a wire rack. Once cooled, top with pesto and garnish with more thyme
Serve slightly warm or chilled. Can be made a day ahead.
