Chop the maraschino cherries and set aside. I quartered mine to have large chunks in the bread. Set aside.
Melt the butter in the microwave for 1 minute, also set aside.
Pre heat oven to 350 degrees and grease your loaf pan.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda and cinnamon.
In a smaller bowl, combine the eggs with the eggnog and slowly add in the butter.
Make a well in the flour mixture, pour in the eggnog mixture and slowly fold in. When almost combined, add in the white chocolate chips and cherries. Mix until just combined.
Smooth mixture into loaf pan. Bake on middle rack, and begin checking at 45 minutes. Mine cooked about 10- 15 minutes, but ovens vary. A skewer should come out clean, and when tapped it should be sound hollow. If it is browning too rapidly, loosely place foil on top.
Once done, allow to cool for 10 minutes on a wire rack. Remove from pan and allow to cool longer.
Once cool, ice if desired. I simply added 1 tablespoon milk to 1 – 1 ½ cups confectioners sugar, drizzled on top. Place maraschino cherries on top for garnish.
ENJOY!
